"Home-cooked food inspired by a recent trip to Morocco: Quorn fillet (vegetable protein), fresh veg and cous cous.
I made my own herb mix by roasting chopped garlic, ground coriander, cumin seeds, mint leaves, sea salt, black pepper and chilli flakes. This gave a rough approximation of a traditional Moroccan spice mix. I added this to some vegetable stock, cooked it all as a stew, and served it with cous-cous."
